Watermelon Feta Salad Recipe

Ingredients

  1. 4 cups watermelon, cut into 1-inch cubes
  2. 2 Persian cucumbers, diced
  3. ¼ cup fresh mint leaves, finely chopped
  4. ¼ cup extra-virgin olive oil
  5. 1/4 cup balsamic vinegar
  6. ¼ tsp salt
  7. ⅛ tsp freshly ground black pepper
  8. ⅓ cup feta cheese, crumbled

Preparation

  1. In a large bowl, combine watermelon, cucumber, and mint leaves.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, salt and pepper.
  3. Sprinkle crumbled feta over the watermelon salad.
  4. Pour dressing over salad and gently toss to combine.
  5. Serve and eat immediately.
